I thought I would show you how I make my mushroom Swiss cheeseburgers. They are one of our favorite burgers. Michael's because he likes mushrooms, avocado and sprouts and mine because I buy way too many mushrooms and eat them as I am cooking. That is probably why I never eat a whole Mushroom Swiss Cheeseburger.
I buy the best ground beef I can find. For us, this is it. It is grass fed, organic, without hormones or antibiotics. The taste is so much better than what you buy ground up in the market. Pricey but worth it.
Still, it's ground beef and it needs some seasoning. I start by grating an onion. Not dicing, actually using a fine grater and grating a half of a large onion. It gives good flavor to the meat without there being chunks of onion.
Next add a clove of garlic squished through a garlic
Then add a good hamburger seasoning. Webber makes one and McCormick makes a Montreal Seasoning for Hamburger.
Add a few shakes of the seasoning plus salt and pepper to taste.
In a crazy move I learned from The Pioneer Woman, pour on a couple of tablespoons of heavy cream. It really does help keep the meat moist and light without it packing together like the sawdust in particle board.
I use my handy dandy little burger press to make three patties. Four quarter-pound patties would be fine. The little ridges make them look like the ones you find in the frozen food section at the market, but they don't taste like it! make sure you refrigerate them unless the grill is hot and ready to go.
Next a slice up a bunch of white mushroom caps. I make a lot because they cook way down and I snack on them until the burgers are done and Michael snacks on them as we clear the table. I put two tablespoons of butter and two tablespoons of oil in a large non-stick skillet and sauté the mushrooms until they give up their liquid and it has evaporated off leaving just the mushrooms and oil they were cooked in. I tilt the pan on th side of the burner for a couple of minutes to allow the oil to drain off then scoop the mushrooms into a bowl. I then hide it in the microwave until the burgers are ready. We are trying to have mushrooms on our mushroom burgers!
Grill the patties as you like them and top with Swiss cheese.
Put them on a bun with sauted mushrooms ( remember they are hidden in the microwave), sliced avocado, and alflfa sprouts, if you're into that. Slather on the Mayo and enjoy!
